What is Peri Peri sauce?

Homemade Nando’s Peri Peri sauce is a spicy hot sauce recipe traditionally made with the key ingredient African Birds eye chilli. It also has a tangy flavour with the addition of fresh lemon juice. Peri Peri sauce can be used as a marinade and is most commonly paired with chicken, as you will find in the well know restaurant chain Nando’s. Peri Peri can also be referred to as piri piri or pili pili in parts of Africa.

What is Nando’s?

Nando’s is a global restaurant chain specialising in grilled Peri Peri chicken.  The chain was founded by Fernando Duarte & Robbie after visiting a Portuguese restaurant in the South Africa in 1987. They where inspired by the succulent spicy Peri Peri chicken served and brought the idea back to London to start their own restaurant venture. Often referred to as “getting a cheeky Nando’s” you can find a Nando’s restaurant on most high streets, it is pretty popular in Britain, though the chain can be found worldwide. Popular dishes to enjoy via takeout  or dining in included grilled Peri Peri; whole spatchcock chicken, chicken wings, butterfly chicken breast, chicken burgers, wraps, Peri Peri salt seasoned fries, spicy rice and selection of peri peri sauce flavours varying in spices.

What ingredients are in Nando’s Peri Peri sauce recipe?

There are so many variations of Peri Peri sauce recipes, this one is close to the traditional African recipe from Mozambique. Its fiery, tangy, thick and has a beautiful vibrant orange colour. You can adjust the chilli level to add more spice or include more fresh herbs to replicate the Nando’s wild and herb sauce. Or add fresh mango slices and lime juice to replicate the mango and lime flavour. The possibilities are endless! Here’s the base ingredients you will need first;

  • Paprika
  • Salt
  • Black Pepper
  • Dried basil
  • Dried thyme
  • Oregano
  • Small red onion
  • Fresh parsley
  • Garlic cloves
  • Green chilli
  • Bay leaved
  • Sweet red bell pepper

Homemade Nandos Peri Peri sauce recipe tips

Type of chillies – If you cannot find African Birds eye Chillies, use any fresh red chillies that are hot. Test your chillies before you blend as every chilli is different. If your still not sure add one chilli at a time to the blender so you can really control the spice level to your preferred taste.

Consistency of the Peri Peri sauce – If your sauce is too thick you can either add more oil or water to the sauce, this will also reduce the spice level. So feel free to add more chillies to keep the sauce spicy.

How to preseve the sauce – Peri Peri sauce can keep for up to two weeks in the fridge. As it is a fresh homemade sauce, the sauce should be refrigerated and not stored in a cupboard at an ambient temperature. Shake the bottle before each use, as the sauce does separate due to no artificial preservatives or artificial stabilisers in the recipe.

Type of bottle to store the Peri Peri sauce – an airtight glass bottles are best for preserving the Peri Peri sauce.

How to use Nando’s Peri Peri sauce?

Peri Peri sauce can be used in 3 ways mainly either as a marinade, baste or a dipping sauce.

Peri Peri Sauce Marinade – Marinate seafood, chicken, fish, pork or even vegetables with rich Peri Peri sauce. It packs a punch of flavour and penetrates well into meat. Marinating with Peri Peri sauce over night gives you the best result when cooking I find.

Peri Peri Sauce Baste – Peri Peri sauce brushed over a grilled chicken on the barbeque or basting a oven roast chicken will literally boost the flavour and juiciness of the meat. The rich sauce works well as a baste brushed over food just before you’re ready to plate, giving you a spicy birds eye chilli flavour kick.

Peri Peri Dipping Sauce – the perfect alternative hot sauce! You can use Peri Peri sauce as a dip, best paired with fries / chips. If you want a cooler flavour you can add a couple of tablespoons to mayonnaise and you will have a delicious Peri Peri infused mayo. This is also known as Perinaise at Nando’s.

Where is Peri Peri sauce from?

Peri Peri or sometimes referred to as piri piri or pili pili has influences from Portugal and Africa. Mozambique have a traditional Peri Peri sauce recipe which is served up on beaches, brushed over amazing grilled chicken. Portuguese settlers in Mozambique influenced the now globally know sauce. The Peri Peri recipe also has its origins in other African countries, such as South Africa, Angola, and Namibia.

How long can you keep Peri Peri sauce in the fridge?

Peri Peri sauce can keep for up to two weeks in the fridge. As it is a fresh homemade sauce, the sauce should be refrigerated and not stored in a cupboard at an ambient temperature. Ingredients

Peri Peri Sauce Ingredients

  • Paprika – 2 x tablespoons
  • Salt – 1 tablespoon
  • Black pepper – 1 x teaspoon
  • Dried basil – 2 x tablespoons
  • Dried thyme – 2 x tablespoons
  • Oregano – 2 x tablespoons
  • Small red onion – ¼ of an onion
  • Fresh Parsley – 1 x large handful
  • Garlic cloves – 9 x cloves
  • African red birds eye chillies – 3 chillies for a mild heat sauce or 10 + chillies for a hot spice level
  • Green chilli – x 1
  • Bay leaved – x 2
  • Sweet red bell pepper – x 1
  • Lemon peel  – 2 x thin slices of lemon peel/skin
  • Lemon Juice – Juice from 6 x lemons
  • White wine vinegar – x 2 tablespoons
  • Vegetable oil – 100ml
  • Cold water –  250ml

     


Instructions

  1. Ingredients: Add all the ingredients into a blender or food processor excluding the vegetable oil
  2. Process: Blend the ingredients
  3. Finishing touches: Once the sauce is formed start to add the vegetable oil to the sauce
  4. Storage: Add the sauce to airtight bottles or an airtight container

Notes

Recipe⬇️

⏺️ Roast vegetables ingredients 
Tomatoes - x 11 (1.3kg)
Roasted peppers - 3 
Shallots - 2 
Fresh Thyme - 8 sprigs 
Black pepper - 1/2 teaspoon 
Garlic - 2 x bulbs cut in half 
Smoked paprika - 2 teaspoons
Worcestershire  sauce - 1 teaspoon
White Onions - 2 
Shallots - 2
@schwartz.uk Italian seasoning - 2 tablespoons 
Tomato purée - 1 teaspoon 
 @filippoberio_uk Olive oil - 3-4 tablespoons 

⏺️ Other ingredients 
Single cream - 190ml
Chicken stock or vegetable stock- 400ml
Fresh basil - 1 large handful 
Salt - 1/2 teaspoon or more to taste
Olive oil

1. Place all the roasts vegetable ingredients onto an oven tray. Bake for 35 minutes at 180c. Turn the vegetables halfway through cooking.

2. Once cooked remove the garlic bulbs and squeeze out the individual cloves of garlic. Then place the all the roast vegetables, tray juices and double cream into a blender. Blitz till smooth, add the basil and blend again.

3. In batches then mix in the chicken stock into the blender. One combined pass through a sieve and pour into a pot. Bring the soup up to a general simmer, taste, then season with salt and the Worcestershire sauce.

4. Plate up the soup and garnish with the cream, olive oil, fresh basil and chilli flakes

15 ml olive oil
400g beef mince 
150ml double cream
200 Italian pork sausage/ plain sausage (pork or turkey)
1 small onion
1 small carrot
1 stalks of celery 
4 cloves garlic
800g tomato pasta sauce @muttipomodorouk 
1 tablespoon red pesto 
400ml beef stock 
7 dried lasagna sheets, broken into pieces
Dried oregano - 1 tablespoon 
Dried basil - 1 tablespoon 
Dried Thyme - 1 tablespoon 
Dried sage - 1 teaspoon 
Salt & black pepper, to taste
20g parmesan 
Salt ½ teaspoon (add more if needed)
Pepper ½ teaspoon 
Fresh Mozzarella ball - x 1 sliced 

“White Sauce Cream”
250 g mascarpone cheese
50 g parmesan cheese, grated
1 minced garlic
Handful fresh bail
Black pepper
60 g sharp cheddar cheese, grated
¼ tsp garlic powder
Pinch of salt & black pepper

Garnish
Fresh basil & garlic bread

This dish is all about slow, soulful cooking. The stew simmers for hours until the roasted tomatoes and red peppers turn beautifully sweet and rich, perfectly balanced by the heat of scotch bonnet peppers 🌶️. Each bite is bold, comforting, and packed with layers of flavour that only time and patience can create.
I served it the traditional way — with freshly boiled rice that soaks up all that delicious stew, and golden fried plantain on the side for the perfect sweet-and-savory combo.

Base ingredients (5 -6 servings)

🔹Chicken stew 
Sweet bell peppers - 4 (remove seeds)
Tomatoes - 4
Red onion - 2
Garlic cloves - 3 
Scotch bonnet - adjust to spice level 1+
(Remove seed for less spice)
Curry powder - 1 tablespoon 
Dried thyme - 1 tablespoon 
Bay leaf - 1
Tomato puree - 70g
Vegetable oil 
Salt add to taste

🔹Chicken & stock
Chicken drumsticks & or thighs - 1kg 
White onion - 1
Spring onions - 2
Fresh thyme - small handful
Fresh Rosemary - small handfull
Bay leaf - 2
Garlic cloves - 4

Batch-prep the salmon fillets &seasoned fish batte Batch-prep the salmon fillets &seasoned fish batter so you can enjoy fresh crispy tacos anytime 🌮

🔹Wet Batter
300 ml tonic or sparkling water
120 g self-raising flour
1 tbsp onion powder
1 tbsp garlic powder
1 tsp paprika
1 tsp salt

🔹Seasoned Flour
120 g self-raising flour
1 tbsp onion powder
1 tbsp garlic powder
1 tsp paprika

🔹Fish
500 g salmon, sliced into thin fillets
Oil for frying

⬇️Method

1) In a large bowl, whisk together the dry wet-batter ingredients, then slowly add the tonic/sparkling water. Transfer to a container.

2) Mix the seasoned flour ingredients in another container. You should now have one wet batter and one seasoned flour. (Keep both refrigerated and use within 3 days)

3) Preheat oil to 165°C. The oil should be hot enough to fry but not so hot that the batter cooks before the fish.

4) Place salmon fillets into the seasoned flour, close the lid, and shake the containers. Shake off excess flour.

5) Dip floured salmon into the wet batter, let excess drip off, then carefully place in the hot oil.

6) Fry 4–5 minutes, flipping halfway, until golden and crisp. Internal temperature should reach 63°C (145°F).

7) Place on a rack, sprinkle with flaky salt, and serve in warm tortillas with slaw, salad, and chipotle ranch.

🥒 Easy Salad
1 cucumber (deseeded)
6 tomatoes (deseeded)
Large handful fresh parsley, chopped

🍋 Everything Dressing
Juice of 5 lemons
3 tbsp Extra virgin olive oil
2 tbsp agave or honey

💡 Hack: 

Keep salad + dressing separate → lasts 4–5 days in the fridge! Season salad just before dressing so you can customise every time.

Fresh, zesty, & perfect with taco bowls, wraps, proteins or just on the side.

🔹Ingredients 
4 carrots, grated
1 small white cabbage, thinly sliced
4 spring onions, sliced vertically into thin strips
4–5 tbsp mayonnaise (add more if you prefer extra creamy) @hellmannsmayonnaise 
2 - 3 tsp chipotle paste @marksandspencerfood 
Parsley- large handful, chopped
¼ tsp black pepper
1 tsp garlic powder

Method

🔹Prep the spring onions: 
- Slice the spring onions vertically into very thin strips.
- Place them in a bowl of ice-cold water, this helps them crisp up and curl.
- Drain well before adding to the coleslaw base.

🔹 Make the dry coleslaw mix
- In a large bowl, combine the grated carrots, sliced cabbage, parsley and drained spring onions.
- Toss to mix evenly.

🔹 Split the mix:
- Divide the dry coleslaw base into two containers:
• Container 1: Store as a dry mix in the fridge to use later in the week (great for salads, wraps, or bowls).
• Container 2: This will be turned into your chipotle coleslaw today.
- Mix the dressing straight into the coleslaw in Container 2, add the mayonnaise, chipotle paste, black pepper, and garlic powder.
- Mix thoroughly until everything is evenly coated.

🔹Serve
- Enjoy immediately with tacos, grilled meats, or as a BBQ side.
