This EPIC GOURMET Bacon Avocado burger is insanely delicious! Perfect homemade ground beef patties combined with crispy bacon, avocado, melted Edam cheese, salad, a sweet and buttery brioche bun! Sounds good right? You have to try out this burger recipe!

Ok Lets face it burgers are amazing and can be cooked by various methods resulting in different flavour profiles. From the charcoal smoky grilled burger patties on a barbeque, to a seriously delicious smash burger cooked in a skillet, a burger seared on a flat top grill or simply cooked via a broiler/grill in an oven! They each have their advantages!

Lets not also forget the king ingredient in a burger, the beef patty! There are so many ways to season and prep your patties to make the ultimate juicy and flavoursome ground beef burger recipe!

This recipe champions burger toppings to take it to the next level! The California style bacon avocado burger, seen in take out restaurants such as In and Out Burger and GBK ( Gourmet Burger Kitchen ) Is a winning extra special burger combination!

What is a gourmet burger?  

The Cambridge Dictionary definition of the word “gourmet” is “(of food) very high quality”, “producing or serving food that is very high quality” “noun – a person who knows a lot about food and cooking, and who enjoys eating high-quality food”.

Now when you apply this to a burger recipe you can elevate it to gourmet level by applying each of the following.

  • Beef Patties – Sourcing the best ground beef available as this enhances flavour.
  • Seasoning – How you flavour your burger patty will take it to the next level compared to your standard fast food burger.
  • Toppings – more than just ketchup and some cheese for a gourmet burger! Additional ingredients such as grilled bacon, caramelised onions, avocado, various varieties or cheese, chilli jam etc will enhance the taste and textures within the burger.
  • Method of cooking the burger – grilling, cast iron skillet cooking, smoking, sous vide, oven baking
  • What type of burger buns? – More flavourful and sometimes homemade bun varieties are often found in gourmet burger recipes such as; Brioche buns, Ciabatta buns, English Muffin, Kaiser Rolls, Onion Rolls, Potato buns, Pretzel Rolls, Sesame Seed Buns. More contemporary, non-traditional, low carb and keto buns include; lettuce buns and avocado buns.

  • Ground beef – 70% Meat to 30% Fat for the best ratio, lean mince will give you a dry and less tastier
  • Edam Cheese

  • Seasonings – Salt, pepper, garlic powder

How to make beef burgers from ground mince?

Smash burger technique

The American smash burger technique requires the ground beef to be rolled into a large meatball shape, then placed into a hot flat top grill or skillet and finally smashed downward with a large kitchen spatula. This creates a rough edge beef patty with an incredible grilled crust on each side of the burger.

This method ensures the burger cooks evenly, remains flat and keeps its shape rather the seize into a ball shape whist cooking. Simply mold the ground beef into a burger shape, then use your thumb to softly make a small dent in the middle, ensuring not to go all the way through the burger. Do not squeeze the mince to close together as this negetivily effect the juiciness of the burger.

There are presses and molds to help get the perfect shape and depth for a burger. Some even allow for you to stuff cheese in the middle to make a classic “ Juicy Lucy” burger.

How long do homemade burgers take to cook?

The length of time it takes for a burger to cook will depend on the method of cooking and the size/thickness of the beef patty. Another consideration to take into account is whether you would like the burger to be well done, medium rare etc.  as cooking times will vary for this.

This bacon avocado burger is cooked via a skillet (you could also use a frying pan or flat top grill).  The cooking time will vary between 2-3 minutes on each in this recipe.

How to put cheese on a burger?

The perfect melted cheese on a gourmet burger is everything! Here is some tips on how and when to add your cheese to the burger patties.

  1. Add the cheese on top of the burger patties whilst in the hot skillet. You should do this once you have already flipped the burger over and its essentially cooked on each side.
  2. Turn off your stove/cooker and let the residual heat from the pan/skillet melt the cheese.
  3. For extra gooey melted cheese, splash a little water into the hot pan/skillet after placing the cheese on top of the burger. Then cover the pan with a lid for a few seconds. This creates a steamy environment in the pan/skillet which helps add additional moisture to the cheese, resulting in an extra juicy cheese layer.

How to make crispy bacon in the oven?

Oven grilled bacon is a great cooking method to achieve a super crispy bacon rasher.  Grilled bacon is a perfect burger topping to add a burst of flavour and crispy texture. Crispy bacon is also amazing crumbled over salad when cooked using this method.

  1. Place bacon rashers onto a grill rack with a drip tray beneath it, ensure the bacon is spaced out
  2. Grill in an oven /broiler until crispy, use a medium heat to allow time for the bacon to cook and dehydrate slightly, without burning. The combination of letting the excess fat drip onto the drip tray and medium heat will result in an amazingly crispy bacon rashers.

How to make bacon avocado ground beef burgers?

  • Pre heat your oven grill/broiler. Place the bacon rashes onto an oven rack, add a drip oven tray to the bottom also to collect the excess fat. Grill at a low heat for 6-8 minutes until crispy.
  • Pre heat a skillet or frying pan to a high heat, do not add any oil yet. Also, pre heat a gridle pan for the brioche burger buns or alternatively toast on top of a toaster.
  • Shape the beef burger patties using your hands, they should be approximately 1 inch thick. Place the burgers onto a plate. Then use your thumb and apply pressure to dent a small dip in the centre of the burgers, this ensures the burger remains flat whilst sautéing in a pan.
  • Prepare all the burger toppings so you are ready to assemble as soon as the beef patties are ready. Lightly grill/toast the sliced brioche buns
  • Add a generous amount of oil to line the skillet, then immediately add in 1 or two patties maximum. The oil will be extremely hot/ Smoky so take care when doing so. Season the top side of the burgers with a pinch of salt pepper and garlic powder. Cook for 2-4 minutes on each side, add additional time for a well-done burger. Ensure to season the over side of the burger once flipped over. The burger should have a dark brown crust on either side to achieve maximum char-grilled style flavour.
  • Place a slice of cheese on the burger whilst the patty is still in the skillet. Now turn off the stove, the cheese will melt with the residual heat in the pan/skillet.
  • Now assemble your gourmet burger stack! I like to start with the base of the grilled brioche, Ketchup, lettuce, tomatoes, onions, the burger Pattie, avocado, bacon and then top with the over half of the brioche bun.

Handy recipe tips for making bacon avocado burgers

Burger patty size – Use kitchen scales to equally weigh out the patties to ensure they are the same size and have even cooking times

Cheese – you can use your preferred cheese of choice edam is quite mild in strength, a cheddar cheese or American style cheese would equally work quite well.

Cooking the burger patties – the pan/skillet gets extremely smoky so ensure your kitchen extractor fan is turned on or open a window to let out the excess smoke 😊

Can I freeze homemade burgers?

Homemade burgers are great as you can make them ahead of time and store in the fridge or even freeze them. You can freeze them individually by putting them into a freezer bag or place them on a cling film/plastic wrap lined tray. They can keep up to 3 months in the freezer.

How long does a frozen burger take to the defrost?

When you’re ready to cook the frozen beef burger patties, them take out the freezer and defrost at room temperature. This can take between 30-60 minutes depending on the size and thickness of the burger patty.

Description

A delicious homemade bacon avocado grilled ground beef burger. An EPIC gourmet burger.


Ingredients

Scale
  • Brioche buns – 4 x Buns sliced
  • Ground beef 600g (4 x 150g patties)
  • Edam Cheese slices – x 4
  • Lettuce – 1 x whole lettuce of choice
  • Beef tomato – 1 x finely slice
  • Avocado – 1 finely sliced
  • Fresh Smoked bacon rashers – x 8
  • Large red onion – 1 x sliced
  • Vegetable oil for sautéing

1st loaf of Sourdough Bread! How did I do? 😅 No 1st loaf of Sourdough Bread! How did I do? 😅 No recipe just vibes. This loaf will be my base technique! I intend to learn & perfect over time.

For reference my starter is 100% rye flour, less than a month old & stored in the fridge. This loaf was baked with both rye and @allinsonsflour @allinsonsbread  strong white bread flour.

Ingredients ➡️ Roast Tomato Soup 🥫🥣 This Ingredients ➡️ Roast Tomato Soup 🥫🥣 This recipe is full of flavour! 🍅🔥 Pair with a grilled cheese toastie for the ultimate comfort food combination! 

Recipe⬇️

⏺️ Roast vegetables ingredients 
Tomatoes - x 11 (1.3kg)
Roasted peppers - 3 
Shallots - 2 
Fresh Thyme - 8 sprigs 
Black pepper - 1/2 teaspoon 
Garlic - 2 x bulbs cut in half 
Smoked paprika - 2 teaspoons
Worcestershire  sauce - 1 teaspoon
White Onions - 2 
Shallots - 2
@schwartz.uk Italian seasoning - 2 tablespoons 
Tomato purée - 1 teaspoon 
 @filippoberio_uk Olive oil - 3-4 tablespoons 

⏺️ Other ingredients 
Single cream - 190ml
Chicken stock or vegetable stock- 400ml
Fresh basil - 1 large handful 
Salt - 1/2 teaspoon or more to taste
Olive oil

1. Place all the roasts vegetable ingredients onto an oven tray. Bake for 35 minutes at 180c. Turn the vegetables halfway through cooking.

2. Once cooked remove the garlic bulbs and squeeze out the individual cloves of garlic. Then place the all the roast vegetables, tray juices and double cream into a blender. Blitz till smooth, add the basil and blend again.

3. In batches then mix in the chicken stock into the blender. One combined pass through a sieve and pour into a pot. Bring the soup up to a general simmer, taste, then season with salt and the Worcestershire sauce.

4. Plate up the soup and garnish with the cream, olive oil, fresh basil and chilli flakes

For the lasagna base:
15 ml olive oil
400g beef mince 
150ml double cream
200 Italian pork sausage/ plain sausage (pork or turkey)
1 small onion
1 small carrot
1 stalks of celery 
4 cloves garlic
800g tomato pasta sauce @muttipomodorouk 
1 tablespoon red pesto 
400ml beef stock 
7 dried lasagna sheets, broken into pieces
Dried oregano - 1 tablespoon 
Dried basil - 1 tablespoon 
Dried Thyme - 1 tablespoon 
Dried sage - 1 teaspoon 
Salt & black pepper, to taste
20g parmesan 
Salt ½ teaspoon (add more if needed)
Pepper ½ teaspoon 
Fresh Mozzarella ball - x 1 sliced 

“White Sauce Cream”
250 g mascarpone cheese
50 g parmesan cheese, grated
1 minced garlic
Handful fresh bail
Black pepper
60 g sharp cheddar cheese, grated
¼ tsp garlic powder
Pinch of salt & black pepper

Garnish
Fresh basil & garlic bread

This dish is all about slow, soulful cooking. The stew simmers for hours until the roasted tomatoes and red peppers turn beautifully sweet and rich, perfectly balanced by the heat of scotch bonnet peppers 🌶️. Each bite is bold, comforting, and packed with layers of flavour that only time and patience can create.
I served it the traditional way — with freshly boiled rice that soaks up all that delicious stew, and golden fried plantain on the side for the perfect sweet-and-savory combo.

Base ingredients (5 -6 servings)

🔹Chicken stew 
Sweet bell peppers - 4 (remove seeds)
Tomatoes - 4
Red onion - 2
Garlic cloves - 3 
Scotch bonnet - adjust to spice level 1+
(Remove seed for less spice)
Curry powder - 1 tablespoon 
Dried thyme - 1 tablespoon 
Bay leaf - 1
Tomato puree - 70g
Vegetable oil 
Salt add to taste

🔹Chicken & stock
Chicken drumsticks & or thighs - 1kg 
White onion - 1
Spring onions - 2
Fresh thyme - small handful
Fresh Rosemary - small handfull
Bay leaf - 2
Garlic cloves - 4

Batch-prep the salmon fillets &seasoned fish batte Batch-prep the salmon fillets &seasoned fish batter so you can enjoy fresh crispy tacos anytime 🌮

🔹Wet Batter
300 ml tonic or sparkling water
120 g self-raising flour
1 tbsp onion powder
1 tbsp garlic powder
1 tsp paprika
1 tsp salt

🔹Seasoned Flour
120 g self-raising flour
1 tbsp onion powder
1 tbsp garlic powder
1 tsp paprika

🔹Fish
500 g salmon, sliced into thin fillets
Oil for frying

⬇️Method

1) In a large bowl, whisk together the dry wet-batter ingredients, then slowly add the tonic/sparkling water. Transfer to a container.

2) Mix the seasoned flour ingredients in another container. You should now have one wet batter and one seasoned flour. (Keep both refrigerated and use within 3 days)

3) Preheat oil to 165°C. The oil should be hot enough to fry but not so hot that the batter cooks before the fish.

4) Place salmon fillets into the seasoned flour, close the lid, and shake the containers. Shake off excess flour.

My weekly ingredient prep hack that keeps things fresh & crunchy for days!

🥒 Easy Salad
1 cucumber (deseeded)
6 tomatoes (deseeded)
Large handful fresh parsley, chopped

🍋 Everything Dressing
Juice of 5 lemons
3 tbsp Extra virgin olive oil
2 tbsp agave or honey

💡 Hack: 

Keep salad + dressing separate → lasts 4–5 days in the fridge! Season salad just before dressing so you can customise every time.

Fresh, zesty, & perfect with taco bowls, wraps, proteins or just on the side.

RECIPE ⬇️ The EASIEST chipotle meal prep slaw RECIPE ⬇️ The EASIEST chipotle meal prep slaw you’ll ever make 🥕🔥Crunchy, creamy + smoky — mix once, eat all week! 

🔹Ingredients 
4 carrots, grated
1 small white cabbage, thinly sliced
4 spring onions, sliced vertically into thin strips
4–5 tbsp mayonnaise (add more if you prefer extra creamy) @hellmannsmayonnaise 
2 - 3 tsp chipotle paste @marksandspencerfood 
Parsley- large handful, chopped
¼ tsp black pepper
1 tsp garlic powder

Method

🔹Prep the spring onions: 
- Slice the spring onions vertically into very thin strips.
- Place them in a bowl of ice-cold water, this helps them crisp up and curl.
- Drain well before adding to the coleslaw base.

🔹 Make the dry coleslaw mix
- In a large bowl, combine the grated carrots, sliced cabbage, parsley and drained spring onions.
- Toss to mix evenly.

🔹 Split the mix:
- Divide the dry coleslaw base into two containers:
• Container 1: Store as a dry mix in the fridge to use later in the week (great for salads, wraps, or bowls).
• Container 2: This will be turned into your chipotle coleslaw today.
- Mix the dressing straight into the coleslaw in Container 2, add the mayonnaise, chipotle paste, black pepper, and garlic powder.
- Mix thoroughly until everything is evenly coated.

🔹Serve
- Enjoy immediately with tacos, grilled meats, or as a BBQ side.
