What is a gourmet burger?
The Cambridge Dictionary definition of the word “gourmet” is “(of food) very high quality”, “producing or serving food that is very high quality” “noun – a person who knows a lot about food and cooking, and who enjoys eating high-quality food”.
Now when you apply this to a burger recipe you can elevate it to gourmet level by applying each of the following.
- Beef Patties – Sourcing the best ground beef available as this enhances flavour.
- Seasoning – How you flavour your burger patty will take it to the next level compared to your standard fast food burger.
- Toppings – more than just ketchup and some cheese for a gourmet burger! Additional ingredients such as grilled bacon, caramelised onions, avocado, various varieties or cheese, chilli jam etc will enhance the taste and textures within the burger.
- Method of cooking the burger – grilling, cast iron skillet cooking, smoking, sous vide, oven baking

How to make beef burgers from ground mince?
Smash burger technique
The American smash burger technique requires the ground beef to be rolled into a large meatball shape, then placed into a hot flat top grill or skillet and finally smashed downward with a large kitchen spatula. This creates a rough edge beef patty with an incredible grilled crust on each side of the burger.
Burger patty with a dent in the middle method
This method ensures the burger cooks evenly, remains flat and keeps its shape rather the seize into a ball shape whist cooking. Simply mold the ground beef into a burger shape, then use your thumb to softly make a small dent in the middle, ensuring not to go all the way through the burger. Do not squeeze the mince to close together as this negetivily effect the juiciness of the burger.
Burger press / molds
There are presses and molds to help get the perfect shape and depth for a burger. Some even allow for you to stuff cheese in the middle to make a classic “ Juicy Lucy” burger.
How long do homemade burgers take to cook?
The length of time it takes for a burger to cook will depend on the method of cooking and the size/thickness of the beef patty. Another consideration to take into account is whether you would like the burger to be well done, medium rare etc. as cooking times will vary for this.
This bacon avocado burger is cooked via a skillet (you could also use a frying pan or flat top grill). The cooking time will vary between 2-3 minutes on each in this recipe.
How to put cheese on a burger?
The perfect melted cheese on a gourmet burger is everything! Here is some tips on how and when to add your cheese to the burger patties.
- Add the cheese on top of the burger patties whilst in the hot skillet. You should do this once you have already flipped the burger over and its essentially cooked on each side.
- Turn off your stove/cooker and let the residual heat from the pan/skillet melt the cheese.
- For extra gooey melted cheese, splash a little water into the hot pan/skillet after placing the cheese on top of the burger. Then cover the pan with a lid for a few seconds. This creates a steamy environment in the pan/skillet which helps add additional moisture to the cheese, resulting in an extra juicy cheese layer.
How to make crispy bacon in the oven?
Oven grilled bacon is a great cooking method to achieve a super crispy bacon rasher. Grilled bacon is a perfect burger topping to add a burst of flavour and crispy texture. Crispy bacon is also amazing crumbled over salad when cooked using this method.
- Place bacon rashers onto a grill rack with a drip tray beneath it, ensure the bacon is spaced out
- Grill in an oven /broiler until crispy, use a medium heat to allow time for the bacon to cook and dehydrate slightly, without burning. The combination of letting the excess fat drip onto the drip tray and medium heat will result in an amazingly crispy bacon rashers.
How to make bacon avocado ground beef burgers?
- Pre heat your oven grill/broiler. Place the bacon rashes onto an oven rack, add a drip oven tray to the bottom also to collect the excess fat. Grill at a low heat for 6-8 minutes until crispy.
- Pre heat a skillet or frying pan to a high heat, do not add any oil yet. Also, pre heat a gridle pan for the brioche burger buns or alternatively toast on top of a toaster.
- Shape the beef burger patties using your hands, they should be approximately 1 inch thick. Place the burgers onto a plate. Then use your thumb and apply pressure to dent a small dip in the centre of the burgers, this ensures the burger remains flat whilst sautéing in a pan.
- Prepare all the burger toppings so you are ready to assemble as soon as the beef patties are ready. Lightly grill/toast the sliced brioche buns
- Add a generous amount of oil to line the skillet, then immediately add in 1 or two patties maximum. The oil will be extremely hot/ Smoky so take care when doing so. Season the top side of the burgers with a pinch of salt pepper and garlic powder. Cook for 2-4 minutes on each side, add additional time for a well-done burger. Ensure to season the over side of the burger once flipped over. The burger should have a dark brown crust on either side to achieve maximum char-grilled style flavour.
- Place a slice of cheese on the burger whilst the patty is still in the skillet. Now turn off the stove, the cheese will melt with the residual heat in the pan/skillet.
- Now assemble your gourmet burger stack! I like to start with the base of the grilled brioche, Ketchup, lettuce, tomatoes, onions, the burger Pattie, avocado, bacon and then top with the over half of the brioche bun.
Handy recipe tips for making bacon avocado burgers
Burger patty size – Use kitchen scales to equally weigh out the patties to ensure they are the same size and have even cooking times
Cheese – you can use your preferred cheese of choice edam is quite mild in strength, a cheddar cheese or American style cheese would equally work quite well.
Cooking the burger patties – the pan/skillet gets extremely smoky so ensure your kitchen extractor fan is turned on or open a window to let out the excess smoke 😊
Can I freeze homemade burgers?
Homemade burgers are great as you can make them ahead of time and store in the fridge or even freeze them. You can freeze them individually by putting them into a freezer bag or place them on a cling film/plastic wrap lined tray. They can keep up to 3 months in the freezer.
How long does a frozen burger take to the defrost?
When you’re ready to cook the frozen beef burger patties, them take out the freezer and defrost at room temperature. This can take between 30-60 minutes depending on the size and thickness of the burger patty.

Ingredients
- Brioche buns – 4 x Buns sliced
- Ground beef 600g (4 x 150g patties)
- Edam Cheese slices – x 4
- Lettuce – 1 x whole lettuce of choice
- Beef tomato – 1 x finely slice
- Avocado – 1 finely sliced
- Fresh Smoked bacon rashers – x 8
- Large red onion – 1 x sliced
- Vegetable oil for sautéing
