The ingredients are readily available, as it’s mostly made with fresh herbs. It’s so easy to make and ready in less than 10 minutes with no cooking needed!
What is Caribbean green seasoning?
Caribbean Green seasoning is a homemade sauce packed with a versatile mixture of fresh herbs and ingredients. The green seasoning is made a head of time and can be paired with meat, chicken, fish etc as a marinade. The sauce originates from the Caribbean, with variations of the recipe originating from Jamaica, Trinidad and Tobago and other islands.

Ingredients for green seasoning
There are variations on the herbs/ingredients used in green seasoning from family to family and throughout the Caribbean. Below is a list of the core ingredients ; (the full recipe including ingredients measurements can be found at the base of this page via the detailed recipe card)
- Parsley
- Fresh coriander (also known as cilantro, shado beni)
- Fresh thyme
- Spring onions
- Red onion
- Red bell pepper
- Fresh garlic cloves
- Fresh ginger
- Celery
- Cold water
- Vegetable oil
- Salt – (optional)
How to make Caribbean green seasoning
This sauce is extremely easy to make in less than 10 minutes! Essentially you just need to add all the ingredients to a food processor, in batches, to create a smooth sauce. You can use a tall blender however, I like the extra surface area in a food processor as you can add more ingredients at a time and also control the consistence of the sauce better.
- Prepare your ingredients, chop into rough pieces small enough to blend easily.
- Add your chopped Spring Onions, Red Onion, Red bell pepper, Garlic, Ginger and Celery into a food processor.
- Pulse every couple of second until the mixture is roughly blended
- Pour half of the cold water, using a jug, into the food processor. This will help the mixture form a finer paste.
- Stop the processor, use a spatula or spoon to scrape any of the blended mixture off the sides of the processor bowl.
- Add the fresh parsley, fresh thyme, coriander and remaining cold water into the food processor. Blend until smooth, you may need to do this in batches.
- Whilst the processor is still blending, pour in the vegetable oil slowly to help the marinade emulsify.
- Add the Caribbean Green Seasoning to a airtight jar.

How to use Caribbean green seasoning
This seasoning is so versatile as you can use as a marinade or flavour enhancer during cooking. Here are the two main ways the Caribbean seasoning can be used;
Marinade
Add to chicken, fish, pork, red meat or even vegetables as a marinade. You will still need to add your additional seasonings , however the green seasoning will boost the background core trinity of Caribbean flavour profiles.
Addition whilst cooking
You can also add a couple of tablespoons of the green seasoning to your stews, sauces, stir fry’s and other stove top cooking. The Caribbean green seasoning serves as a fresh herby flavour enhancer when used in this way. It also saves you time from individually preparing and chopping up all the ingredients within the green seasoning.

Ingredients
Caribbean Green Seasoning Ingredients
- Parsley – 2 x large handfuls
- Fresh coriander (cilantro, shado beni) – 2 x large handfuls

- Spring onions – 3 x stalks chopped
- Red onion – 1 x small onion chopped
- Red bell pepper – x 1 chopped
- Fresh garlic cloves – x 9 whole peeled cloves
- Fresh ginger- 40g of peeled ginger chopped
- Celery 2 x large celery stalks
- Cold water – 200ml
- Vegetable oil – 50 ml
- Salt – 1 x teaspoon (optional)
Instructions
- Prepare your ingredients.
- Add your chopped Spring Onions, Red Onion, Red bell pepper, Garlic, Ginger and Celery into a food processor.
