What’s the difference between egg rolls and spring rolls
The main difference between spring roll and egg roll wrappers is that spring roll wrappers are made from wheat flour and water. They are also much thinner in texture compared to egg rolls. Egg roll dough is made from egg and flour and is a lot thicker in texture.
Where to buy egg roll wrappers
Most mainstream supermarkets stock egg roll or spring roll wrappers. They are usually sold frozen and then defrosted just before use. Asian supermarkets stock a great range of authentic egg roll brands. For this recipe I used the 8×8 Spring Home Tyj Spring Roll Pastry, egg roll wrappers can sometimes be difficult to find in the UK.
Are egg rolls healthy
Egg rolls are usually deep fried in oil which increases the fat content. However, egg rolls can be adapted for a healthier recipe by air frying or baking the rolls. Also, summer rolls made from rice paper do not need to be cooked and can be great when packed with vegetables, shrimp, and other Asian inspired aromatic flavours.

Egg rolls are manly served and enjoyed as an appetiser with a dip or sauce on the side. Depending on the egg roll filling they can be paired with some of the following dips and sauces.

Air fryer spring rolls are a great healthy alternative to frying buffalo chicken egg rolls. You can still achieve a crispy texture for the exterior egg roll pastry whilst the filling of the roll remains moist and cooked through.
How to make buffalo chicken egg rolls
Making buffalo spring rolls is easy to do by following the steps below: (get the full recipe including ingredients by scrolling to the recipe card at the bottom of this blog post)
Prep: Preheat the air fryer
Making the buffalo chicken filling: Mix the shredded chicken, spring onions/green onions, grated mozzarella, cream cheese and dried parsley.
Preparing the egg rolls: Prep and fill the egg roll rappers
Air frying the egg rolls: lightly spray or brush the air fryer basket / tray with oil. Place the spring roll into the air fryer, sealed side down first. If using spring roll wrappers brush the top and sides of the rolls with the egg wash or if using slightly thicker egg roll wrappers brush with just oil. Air fry for 9 minutes at 200c /395-400f, turning halfway through cooking and repeat the egg wash /oil brushing process on the other side of the roll.
Plating: Serve the egg rolls with blue cheese dip or extra buffalo sauce and celery sticks garnish
How to roll egg rolls
On a clean surface place the spring/egg roll wrapper down in a diamond shape, add 1 x tablespoon to the corner of the wrapper leaving a little space from the edge. Then fold over the wrapper once just over the top of filling and tuck in slightly. Grab the right- and left-hand side of the wrapper to create an envelope shape. Then roll the bottom of the egg roll upwards, just before you reach the end of the envelope shape brush the edges of the wrapper with egg wash and continue to roll to seal the egg rolls. Place the eggroll on a greased tray and cover with a damp kitchen towel whilst preparing the other remaining eggs rolls. Take your time and ensure you are wrapping tightly throughout the process to avoid air bubbles which will unravel the egg rolls whilst air frying.

This Homemade Air fryer Garlic Parmesan Truffle Fries recipe requires minimal effort, tastes amazing and is so easy to make! These fresh, healthy and crispy seasoned air fried French fries are the best for dinner, lunch or a delicious snack!
WHAT POTATOES MAKE THE BEST FRENCH FRIES
Potatoes come in many varieties, the best type of potato to use for French fries are starchy potatoes. Starchy potatoes are low in water and high in starch which makes them perfect for making crispy French fries or chips.
For my air fryer garlic parmesan truffle fries recipe I used baking potatoes. I prefer to use baking potatoes when making homemade French fries. As I am based in the UK baking potatoes are usually the King Edward variety. Maris piper potatoes are also used for making fries / chips as they have a great natural flavour, although I do find they tend to brown a lot faster whilst air frying compared to other baking potatoes.

ARE RUSSET POTATOES GOOD FOR FRENCH FRIES
Russet potatoes are a great potato variety for making air fryer French fries and chips. They also have a high starch content which is perfect for making fries. The long shape also helps to make amazing long French fries when making homemade chips.
HOW TO CUT POTATOES TO MAKE FRENCH FRIES
Making homemade French fries is so easy to do! How you cut potatoes to make fries really comes down to personal preference. For example, you could cut the potatoes quite thinly for a crispier classic French fry shape. Or you could cut the potatoes in more of a chunky style like you would find in a traditional British chip shop or pub. Here is a step by step break down of how to generally cut potatoes for French fries.
- Slice the peeled or skin on potatoes into large disks
- Stack half of the potato disks on top of each other to create a pile
- Then slice vertically to create long potato batons / fries
- Repeat the step again with the remaining pile of potato disks
WHY SOAK POTATOES IN WATER BEFORE FRYING
When making French fries, soaking the sliced potatoes in water before air frying can help to remove some of the starch in the potatoes. This will stop the potatoes from sticking together and increase the crispiness of the fries. It’s not essential to do this for my air fryer garlic parmesan truffle fries’ recipe. However, if you would like to pre-soak the fries before air frying then you will need to add the sliced potatoes to a bowl of cold water and let them sit for 20 minutes. Drain and pat dry before adding to the air fryer.
WHY ARE MY AIR FRYER FRIES SOGGY
If prepared incorrectly air frier French fries can be soggy. To prevent this, ensure that you:
- Place the fries on one layer of the air fryer basket or tray. If you overload or overlap the French fries a steaming effect will take place whilst cooking as the moisture on the fries is interlacing.
- cook larger amounts in batches to make sure the French fries are crispy
- If you are making homemade French fries which have been soaking in cold water, ensure you drain the water and pat the chips dry with kitchen towel. Excess water on the fries before cooking will make them soggy
- Halfway through cooking shake the basket or use a kitchen tong to turn over the French fries / chips to ensure both sides are crispy.
HOW LONG DOES IT TAKE TO AIR FRY FRENCH FRIES
Fresh homemade French fries can take between 15-18 minutes to cook in a preheated air fryer. Times will vary based in the model.
HOW LONG DOES IT TAKE TO AIR FRY FROZEN FRENCH FRIES
Frozen French fries can take between 18 – 20 minutes to cook in a preheated air fryer. Times will vary based in the model.
WHAT TEMP TO AIR FRY GARLIC TRUFFLE FRIES
I have found the best temperature to air fry homemade garlic parmesan truffle fries is 170c/340f. Preheating the air fryer beforehand also speeds up the cooking time for the fries.
HOW TO MAKE GARLIC PARMESAN TRUFFLE FRIES

- Air fryer prep: firstly, preheat your air fryer
- Cutting the fries: Slice the peeled or skin on potatoes into large disks, stack half of the potato disks on top of each other to create a pile, then slice vertically to create long potato batons / fries, repeat the step again with the remaining pile of potato disks. (check tips below the recipe card)
- Air frying the fries: Place the fries into the air fryer, spray vegetable oil over the potatoes and use a tong to mix and evenly spread the fries on the air fryer basket/tray. The fries should not be overlapping each other, so you can cook them in batches depending on the size of your air fryer.
- Cooking time and temperature: Air fry for 10 minutes at 170c/340f then shake the basket or use a tong to flip the fries over and air fry for another 5 – 8 minutes.
- Seasoning the fries: Add the crispy fries into a large bowl and pour over the garlic, parmesan cheese, truffle oil, parsley, black pepper, salt and gently mix with kitchen tongs until all the fries are coated with the seasonings. The garlic parmesan truffle fries are now ready to serve!

Can you cook frozen egg rolls in an air fryer
You can freeze homemade egg rolls and cook them straight from frozen in an air fryer once you are ready to use them! Place the egg rolls in an air fryer basket/rack and cook for 8 minutes 340°F/170°C flipping halfway through and brushing with oil or egg wash if using spring roll rappers. Then cook for a further 2-3 minutes at 400°F/205°C to crisp up the rolls.
How to reheat egg rolls in an air fryer
Air fryers are great for reheating egg rolls as it keeps the wrappers crispy and allows for even cooking results.

Buffalo sauce is a spicy sauce made from distilled vinegar, cayenne peppers, salt, water, oil, paprika, butter and garlic powder. Buffalo sauce is often paired with chicken especially chicken wings.

- Spring roll or egg roll wrappers – 16 x wrappers (8 x8 inches)*
- Cooked shredded chicken – 2 Cups / 180g
- Buffalo wings sauce – ½ Cup / 125ml (I use Franks wings hot sauce)
- Cream cheese – 1/3 Cup / 70g
- Dried Parsley – ½ teaspoon
- Sliced Spring onions / Green onions – ¼ cup / 15g
- Grated mozzarella cheese – ½ cup / 55g
- Eggs – 2 x whisked (for the egg wash)

Notes
Cut larger spring roll or egg roll wrappers to size if you can’t find 8 x 8 wrappers.
Do not overstuff the egg rolls as they are more likely to burst, less is more
For this recipe I used Spring Home Tyj Spring Roll Pastry. If you used thicker egg roll wrappers brush them with oil just before air frying not egg. The egg roll wrappers might need extra time to air fry as they are thicker than spring roll wrappers
